4th Trimester Foods : Bone Broth

We are all about keeping things simple here, and postpartum prep especially the cooking prep can seem so daunting. Here we'll break down a super simple, delicious and healing bone broth!
We'll start with any veg compost you have from the week, any leftover fresh veg, and an onion, few stalks of celery and some carrots. You can chop all super rough!

I gather all my random herbs from the week, and make sure I have some thyme, sage, and rosemary.

Take your halved onion, lemon, and garlic. Put it into a big giant oiled pot, face down! Leave it there for about 5 minutes, you want to make sure you don't burn anything - just lightly browned.
Take all your herbs, bundle them with some cooking twine and drop into the veg mix. Give a good stir.

Throw in a few bay leaves, some black peppercorns and any other fun stuff around your kitchen. My go-to's are reishi, kombu, and parmesan rinds. 

You can get creative! Throw any dried mushrooms, cardamom, cinnamon sticks, whatever flavours you like and have around.

Throw a glug of vinegar in, it's helpful to get more nutrients out of your chicken.

I ended up eating the last ferment, so threw in the brine, fermented garlic and dill.

Use what's in your fridge, folks.

Dump in your chicken bones, carcass, skin and juices.

You can roast your own chicken (wings, bones, carcass) or use a rotisserie chicken's bones.

Fill the pot with water until all is covered, bring to a boil and then simmer slowly for a long while.

Once it's been a few hours, you have a layer of fat and everything has been broken down. It's time to strain!

Use a slotted spoon/spider to get the big pieces out, and then use a sieve for the final strain.
And there you have it! Wonderful chicken bone broth.

Feel free to throw into a soup right away, or freeze for later.
